Ingredients

  • 3 ripe bananas, mashed

  • 1 teaspoon (5 ml) vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon (5 g) baking soda
  • 1/2 teaspoon (2.5 g) salt
  • 1/4 teaspoon (1.25 g) cinnamon
  • 1/4 cup (60 ml) milk

Directions

  1. Preheat oven to 180°C (350°F) and grease a 9x13 inch (23x33 cm) baking pan.
  2. In a large bowl, whisk together the mashed bananas, oil, eggs, granulated sugar, brown sugar, and vanilla extract until well combined.
  3. In a medium bowl, sift together the flour, baking soda, salt, and cinnamon.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
