Ingredients:
- 1 cup heavy cream
- 1/2 cup milk
- 1/4 cup sugar
- 4 large egg yolks
- 1 teaspoon vanilla extract
Instructions:
- Preheat oven to 325 degrees F (165 degrees C).
- In a medium saucepan, combine the heavy cream, milk, and 1/4 cup sugar. Bring to a simmer over medium heat, stirring occasionally.
- In a separate bowl, whisk together the egg yolks and vanilla extract.
- Gradually whisk in the hot cream mixture, stirring constantly.
- Pour the custard into six 6-ounce ramekins.
- Place the ramekins in a baking dish and fill the baking dish with enough hot water to come halfway up the sides of the ramekins.
- Bake for 45-50 minutes, or until the custard is set but still slightly jiggly in the center.
- Remove the ramekins from the baking dish and let cool to room temperature.
- Preheat broiler to high.
- Sprinkle the remaining 1/4 cup sugar evenly over the top of each custard.
- Broil for 2-3 minutes, or until the sugar is melted and caramelized.
- Let cool for a few minutes before serving.
Tips:
- For a richer flavor, use whole milk instead of skim milk.
- For a more intense vanilla flavor, use 2 teaspoons of vanilla extract.
- To prevent the custard from cracking, do not overcook it.
Variations:
- For chocolate crème brûlée, add 1/4 cup of melted bittersweet chocolate to the custard mixture.
- For coffee crème brûlée, add 1/4 cup of strong coffee to the custard mixture.
- For fruit crème brûlée, add 1/2 cup of chopped fresh fruit to the custard mixture.
