Classic Crème Brûlée

Crème brûlée is a classic French dessert that is made with a creamy custard topped with a layer of caramelized sugar. It is a rich and decadent dessert that is perfect for a special occasion.

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. In a medium saucepan, combine the heavy cream, milk, and 1/4 cup sugar. Bring to a simmer over medium heat, stirring occasionally.
  3. In a separate bowl, whisk together the egg yolks and vanilla extract.
  4. Gradually whisk in the hot cream mixture, stirring constantly.
  5. Pour the custard into six 6-ounce ramekins.
  6. Place the ramekins in a baking dish and fill the baking dish with enough hot water to come halfway up the sides of the ramekins.
  7. Bake for 45-50 minutes, or until the custard is set but still slightly jiggly in the center.
  8. Remove the ramekins from the baking dish and let cool to room temperature.
  9. Preheat broiler to high.
  10. Sprinkle the remaining 1/4 cup sugar evenly over the top of each custard.
  11. Broil for 2-3 minutes, or until the sugar is melted and caramelized.
  12. Let cool for a few minutes before serving.

Tips:

  • For a richer flavor, use whole milk instead of skim milk.
  • For a more intense vanilla flavor, use 2 teaspoons of vanilla extract.
  • To prevent the custard from cracking, do not overcook it.

Variations:

  • For chocolate crème brûlée, add 1/4 cup of melted bittersweet chocolate to the custard mixture.
  • For coffee crème brûlée, add 1/4 cup of strong coffee to the custard mixture.
  • For fruit crème brûlée, add 1/2 cup of chopped fresh fruit to the custard mixture.
