How to Make a Classic Roast Chicken

 

Roast chicken is a classic dish that is perfect for any occasion. It is a simple dish to make, but it is always impressive.

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Remove giblets from chicken and discard.
  3. Rinse chicken inside and out with cold water.
  4. Pat chicken dry with paper towels.
  5. Rub chicken all over with olive oil.
  6. Sprinkle chicken with salt and pepper.
  7. Place onion, carrots, and celery in the bottom of a roasting pan.
  8. Place chicken on top of vegetables.
  9. Roast chicken for 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165 degrees F (74 degrees C).
  10. Let chicken rest for 15 minutes before carving.

Tips:

  • For a richer flavor, rub chicken with butter instead of olive oil.
  • To make the roast chicken ahead of time, roast it and then let it cool completely. Cover the chicken and refrigerate for up to 24 hours. When ready to serve, reheat the roast chicken in a 350 degree F (175 degrees C) oven for 30-45 minutes, or until heated through.
  • For a vegetarian roast chicken, stuff the chicken with your favorite vegetables.
