Simple and Delicious Indonesian Beef Rendang

  • 2 pounds beef chuck roast, cut into 1-inch cubes

  • 1 (14.5 ounce) can coconut milk
  • 1/2 cup water

Instructions:

  1. Heat the oil in a large Dutch oven over medium heat. Add the beef and cook until browned on all sides, about 10 minutes.

  2. Add the onion, garlic, and ginger and cook until softened, about 5 minutes more.

  3. Add the turmeric powder, coriander powder, cumin powder, nutmeg, salt, and pepper and cook for 1 minute more.

  4. Add the diced tomatoes, coconut milk, and water and bring to a boil. Reduce heat to low and simmer for 2-3 hours, or until the beef is tender and the sauce has thickened.

  5. Serve hot with rice.

  • For a more flavorful rendang, you can marinate the beef in the sauce for up to 24 hours.
