How to Make a Classic Crème Brûlée


Crème brûlée is a rich and creamy custard topped with a layer of caramelized sugar. It is a classic French dessert that is perfect for any special occasion.

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. In a medium saucepan, heat heavy cream and sugar over medium heat until sugar dissolves.
  3. Remove from heat and let cool slightly.
  4. In a medium bowl, whisk egg yolks until light and fluffy.
  5. Gradually whisk in warm cream mixture, then stir in vanilla extract.
  6. Pour custard into six 6-ounce ramekins.
  7. Place ramekins in a baking dish and pour enough hot water into the baking dish to come halfway up the sides of the ramekins.
  8. Bake for 30-35 minutes, or until the custard is set but still slightly jiggly in the center.
  9. Remove ramekins from the baking dish and let cool on a wire rack for 1 hour.
  10. Sprinkle each ramekin with 1 tablespoon of sugar.
  11. Using a kitchen torch, caramelize the sugar until it is golden brown.
  12. Serve immediately.

Tips:

  • For a richer flavor, use whole milk in place of heavy cream.
  • To make a vanilla bean crème brûlée, use 1 vanilla bean, split lengthwise and scraped. Add the bean and seeds to the cream mixture and simmer for 5 minutes before removing from the heat.
  • To make a chocolate crème brûlée, add 1/2 cup of melted chocolate to the custard mixture.
